Dandelion, which grows wild all over Prince Edward Island, is most commonly seen as a noxious weed that competes with commercial crops. Dandelion roots, leaves and bright yellow flowers have, however, been used for medicinal purposes for centuries. The roots, after having been dried and roasted, make a delicious coffee substitute that has numerous health benefits.
